Sausage casserole recipe

Sausage casserole is a hearty and flavorful dish that combines browned sausages with a medley of vegetables and a rich tomato-based sauce. Here's a simple sausage casserole recipe:

Ingredients:

1 pound (450g) sausages (your choice of type)

1 onion, chopped

2 cloves garlic, minced

2 carrots, sliced

2 celery stalks, chopped

1 red bell pepper, diced

1 can (14 oz/400g) diced tomatoes

1 cup (240ml) chicken or vegetable broth

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons vegetable oil

1 cup (200g) white rice or 4 cups (600g) cooked pasta (optional for serving)

Instructions:

- In a large ovenproof casserole dish or a skillet, heat the vegetable oil over medium-high heat.

- Add the sausages and brown them on all sides, about 5 minutes. Remove the sausages from the dish and set them aside.

- In the same dish, add the chopped onion and cook until it becomes translucent, about 3 minutes. Stir in the minced garlic and cook for another 30 seconds.

- Add the sliced carrots, chopped celery, and diced red bell pepper to the dish. Cook for 5-7 minutes, or until the vegetables begin to soften.

- Stir in the diced tomatoes, chicken or vegetable broth, dried thyme, salt, and pepper. Bring the mixture to a simmer.

- Return the browned sausages to the dish, nestling them into the vegetable mixture.

- Preheat your oven to 350°F (175°C).

- Cover the casserole dish with a lid or aluminum foil and place it in the preheated oven. Bake for 30-35 minutes or until the sausages are cooked through and the vegetables are tender.

- Serve the sausage casserole over cooked rice or pasta, and enjoy!
